鸡头米又称苏芡，是芡实的一种，水八仙之一，睡莲科水生草本植物。果实呈圆球形，淡黄色，尖端突起，因形状像个鸡头，便有了鸡头米这个叫法。鸡头米养殖在池塘里，它的叶子也叫“鸡头盘”，密密麻麻的叶子上面布满了隆起和皱缩，表面还有许多刺。分新鲜和干米两种成品。
